Lunar new year: sweet and sour chicken
Ingredients
- 2 chicken breasts, cut into bite-size pieces
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped
- 2 tablespoons vegetable oil
For the sauce:
- 3 tablespoons ketchup
- 1 tablespoon white vinegar
- 1 teaspoon brown sugar
- 2 tablespoons soy sauce
- 100ml water
Method
- Heat oil in a pan. Cook chicken until browned. Remove and set aside.
- In the same pan, add bell peppers and onion, sauté until soft.
- For the sauce, mix ketchup, vinegar, sugar, soy sauce, and water in a bowl.
- Add the sauce to the pan with vegetables. Bring to a simmer.
- Return the chicken to the pan. Cook together for 5-10 minutes until the sauce thickens.
- Serve with rice or noodles.
