Summer salads series: Mango & Avocado
Simple to prepare and bursting with flavours
This salad is super simple to make and has only the best and freshest ingredients. It balances sweet, creamy, spicy, and refreshing all in one bite.
Ingredients
- 2 medium, ripe avocados
- 1 ripe mango
- 1 jalapeno
- 1/4 red onion
- 1/2 cup cilantro (about a handful)
- 1/2 – 1 tbs olive oil
- 1/4 lemon (about 1-2 tbsp juice)
- 1/2 tsp salt
- 1/2 tsp pepper
Method
Prepare the components of the salad. Starting with the mango, cut it into relatively big chunks, you’re looking for pieces slightly smaller than bite size. Do the same for the avocado. For the other the red onion and the jalapeno, finely dice them and roughly chop the cilantro.
To dress the salad, add about 1/2 to 1 tbs of olive oil, lemon juice, salt, and pepper.
