Summer salads series: Classic Caesar Salad

A hearty, homemade dish with creamy dressing and crunchy croutons

If you're in search of a meal that's both fulfilling and simple to prepare, this robust salad with homemade croutons and a rich dressing is an ideal choice.


For the dressing:

  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp mayonnaise
  • 1 tbsp dijon mustard
  • salt
  • pepper
  • 1 clove garlic, crushed or minced
  • 1/2 cup sour cream

For the croutons: 

  • 4-5 slices of bread of choice
  • 1/2 tbsp olive oil
  • salt
  • pepper

For the salad:

  • 4 cups romaine lettuce, shredded or cut up
  • 2 cucumber
  • 3 spring onions
  • 4 eggs
  • 2 cups croutons
  • 1 cup dressing
  • 1/2-3/4 cup parmesan (by preference)



  1. Mix together all the ingredients: lemon juice, olive oil, mayonnaise, dijon mustard, garlic, and sour cream. Season with salt and pepper to taste.


  1. Preheat the oven to 200ÂșC. Cut or tear up the bread into crouton-sized chunks.
  2. Place on a parchment lined baking sheet and bake for 8-10 minutes. Let cool, then toss in the olive oil, salt, and pepper.


  1. Boil a small pot of water. Add the eggs, and boil for 10 minutes. Immediately, place them into an ice bath to stop the cooking process.
  2. Meanwhile, add the shredded or sliced lettuce into a salad bowl. Slice the cucumbers into rounds, then chop up the spring onions. Add to the bowl.
  3. Peel the eggs and cut into small chunks, adding to the bowl. Then, add croutons, dressing, and parmesan (to your taste). Mix, and season as necessary with salt and pepper.

You can also add grilled or roast chicken to enrich your salad.
