Recipe: Vegetable and noodle stir fry

We've put together a selection of good value, easy to cook recipes for you, that feed four people. Use the video to cook along, or you can follow the steps below.

Take it in turns with your housemates to cook for each other and enjoy sharing a meal together. You'll also save energy by batch cooking rather than all making your meals separately. 

Ingredients:

  • 250g egg noodles
  • 1 bag short-crust pastry mix
  • 1 onion
  • 1 punnet of mushrooms
  • 3 peppers
  • Seasoning: oil, garlic, ginger, soya sauce and spices

Method:

  1. Give the mushrooms a quick gentle wash – you don’t want the mushrooms absorbing lots of liquid 
  2. Slice mushrooms and peppers
  3. Peel and finely slice the onion 
  4. Wash and prepare the spring onions 
  5. Peel and cut the carrots into thin slices
  6. Once the veg has been prepared, add it all to a pan with oil and cook until they soften slightly
  7. Cook the noodles in pre-boiled water as per the packet instructions 
  8. Slice garlic and ginger and add to the pan with the veg
  9. Once the noodles have cooked, drain them and add them to the pan and mix together well
  10. Add a few dashes of soya sauce
  11. Taste and adjust seasoning before serving 

Meat options: If you want to add meat, add it at the start of the cooking process to allow it to cook thoroughly before adding the vegetables.

Vegetarian options: Cook eggs into a thin omelet, slice, and add to finish the stir fry off for a protein punch 

Serving suggestions:

Want the meal to go further? Add a bag of bean sprouts

Frozen stir-fry vegetable mix can be used as an alternative to fresh

Using soya sauce will reduce the need to use salt during cooking 

Coconut or sesame oil can be used for added flavour.
