Recipe: Frittata

We've put together a selection of good value, easy to cook recipes for you, that feed four people. Use the video to cook along, or you can follow the steps below. 

Take it in turns with your housemates to cook for each other and enjoy sharing a meal together. You'll also save energy by batch cooking rather than all making your meals separately. 

Ingredients: 

  • 2 potatoes
  • 2 onions 
  • 3 eggs
  • 3 peppers
  • 50g cheese

Store Cupboard staples – oil, seasoning, splash of milk, garlic and spices of your choice  

Seasoning: salt, pepper, spices of your choice – maybe smoked paprika and garlic 
Optional: 

Method: 

  1. Peel and finely dice the onion and potatoes (these should be the size of a 1cm square)
  2. Finely grate or chop 2 cloves of garlic
  3. Dice your pepper
  4. Add water to a pot and bring to the boil
  5. Once boiling add your potatoes and boil for 5 mins or until tender - once boiled drain and set aside
  6. Heat a pan with some oil in
  7. Add your garlic and onions and fry until soft
  8. Once they are soft and browned a little, add your pepper and boiled potatoes and cook until soft
  9. Whilst this is cooking, mix your eggs and milk together and pour it into the pan to almost cover everything
  10. Top the pan with the grated cheese
  11. Don't mix but continue to cook until the egg mixture has set ensuring it doesn't stick to the pan
  12. Remove the pan from the heat
  13. Add grated cheese over the top, and place on low heat under the grill until browned - the eggs should take no longer than 10 mins.

Serving suggestions:

Eat hot or eat it the next day cold. Lovely with a side salad or on its own.  

If you fancy a spicy version cook the potatoes with curry powder and add some chilli.

Great to share with friends for breakfast, lunch, or dinner.

Add chopped ham or cooked chicken if you want to make it a meat option.
