Recipe: Boston beans and sausage

We've put together a selection of good value, easy to cook recipes for you, that feed four people. Use the video to cook along, or you can follow the steps below.

Take it in turns with your housemates to cook for each other and enjoy sharing a meal together. You'll also save energy by batch cooking rather than all making your meals separately. 

Ingredients: 

  • 1 onion
  • 1 tin of chopped or plum tomatoes
  • Tin of mixed beans
  • 8 vegan, vegetarian or meat sausages
  • Seasoning: tomato puree, sugar, vinegar, paprika and garlic 
  • Optional: stock cube 
  • You can add more vegetables such as peppers, courgettes, aubergines and carrots to your liking.

Method: 

  1. Make sure your areas are clean and tidy and wash your hands before you start 
  2. Peel and finely slice the onion. Remember to leave the core on the onion to minimise the affect of your eyes watering 
  3. Finely chop or grate two cloves of garlic 
  4. Vegetable or sunflower can be used 
  5. Add a few table spoons of vegetable or sunflower oil to a pan 
  6. Add crushed garlic, then onion, then sausages. Add any finely chopped vegetables at this point if you want to 
  7. Caramelise the onion and brown the sausages for an even colour – 10 minutes should be enough 
  8. Add the seasoning of your choice: salt, pepper, chilli, paprika, any spices of your choice 
  9. Add a couple of tablespoons of tomato puree, which will thicken the sauce and intensify the flavour 
  10. Add the mixed beans 
  11. Add tinned tomatoes and allow to reduce. Plum tomatoes are usually cheaper than pre chopped, and you can always break them down with your cooking utensil 
  12. Add two tablespoons of vinegar 
  13. Crumble in a stock cube of your choice (vegetable or chicken) depending on your choice of sausage 
  14. For an extra sticky finish you can add a spoon of sugar, syrup or honey 
  15. Serve with mashed potato, a side of vegetables or in a jacket potato.
