Student cooks: Chicken pasta

Having a meal that will last you a week or a few days whilst at uni can be a lifesaver, especially if you see cooking as more of a chore. My quick and easy chicken pasta is one of those dishes.

Follow my method below or add your favourite ingredients to really make it your own!

Ingredients 

  • Diced chicken breast - 1kg 
  • Spaghetti - 700g 
  • Pasta sauce - 500g 
  • 2 onions 
  • 3 cloves of garlic 
  • Salt & pepper to taste 
  • Olive oil 

Method

  1. Boil pasta in a pot of water for the recommended amount of time as per packet instructions. 
  2. Once done, drain the pasta, and reserve a cup's worth of pasta water 
  3. In a separate, add some oil to your pan and cook the diced chicken for approximately 4-6 minutes, over a medium high heat 
  4. Add your onions 2 minutes before finishing the chicken, and add the garlic about 30 seconds later. This will ensure that everything finishes cooking together without anything burning 
  5. Once the onions have turned translucent, and your chicken has been cooked thoroughly, turn off the flame, and add the pasta and pasta sauce to your chicken 
  6. Add some of the pasta water to the pan, this will help with the pasta sauce's consistency. Add until desired consistency has been reached 
  7. Serve warm with a grating of parmesan cheese, and refridgerate remaining pasta for the week 

Tips 

  • Salt the pasta water when boiling 
  • Marinate your chicken the night before(with any seasonings of your choice) for extra flavor 
  • If your pan is too small, cook the chicken in batches
