Meal prep with me: Japanese curry
Easy to prepare and delicious to eat!
With this amazing recipe, you will be able to produce four portions! You can choose to share them between you and your friends or save them for meals throughout the week. You will save lots of money by meal prepping this way! Just make sure to properly store them in the fridge so the food stays fresh for longer.
Cooking time
Prep: 10 mins
Cook: 25 mins
Serves: 4
Ingredients
- 250g rice
- 450g onions
- 120g carrots
- 150g potatoes
- 4 curry blocks
- 700ml water
Method
- Peel vegetables and chop them to desired thickness.
- Wash and strain the rice, fill rice and water with a 1:2 ratio and cook in a rice cooker.
- Heat 1 tsp of oil in a pan and cook vegetables.
- After 5 mins (or when the onion turns translucent), add water and bring to a boil.
- Reduce heat, cover and simmer for 15 mins.
- Turn off the heat, and add 4 blocks of curry mix to the pan.
- Stir until completely mixed in.
- Serve over white rice!
