Student favourite: Trendy jar noodles
A quick, easy and trending recipe from our student Jamie 🫙
Only requiring one jar and minimal prep, this is a great recipe to meal prep for the week!
To be more sustainable and save some pennies, recycle your paste sauce jar by cleaning it and reusing it as many times as you like.
Serves: 1
INGREDIENTS
- Rice noodles
- Mixed vegetables (sweetcorn, spinach, green beans, carrots)
- Soy sauce
- 1 tsp ginger paste
- 1 tsp chopped garlic
- 1 tsp chilli sauce
- 1 tbsp peanut butter
- Sesame oil
- Tofu or shrimp
METHOD
- Put a dash of soy sauce, a dash of sesame oil, ginger paste, chopped garlic, chilli sauce and peanut butter into the bottom of your jar (you can add more or less according to your preferences).
- Add a mix of your vegetables, and chop any if needed like carrot, cucumber and mushrooms. My go to is green beans, sweetcorn and carrots but you can be creative and add any of your favourite veggies!
- If you want to add a protein, I recommend to add cooked shrimps or if you're vegan add tofu instead.
- Close the jar and when it's time to have lunch/dinner simply add some boiling water to your jar, close and shake it. Rice noodles only need 3-5 minutes in hot water to be cooked. After 5 minutes, put everything in a bowl and it's ready to be eaten.
- Have it at home or take it out and about with you!
