Rebirth pizza
Suitable for vegan and vegetarian diets.
This recipe was created by one of our talented students, Rishkandha Tomar in Camberwell College of Arts, in a collaborative workshop with UAL Climate Emergency Network and UAL Regenesis. Follow this plant-based recipe for a delicious comfort dish.
Ecosystem story 🌱
In this imagined world, animals are no longer seen as commodities but as valued members of our community. We would provide them with shelter and food not solely for what they can produce, but for the harmony and balance they bring to our lives. Similar to our beloved pets, they would share our homes and live alongside us in a world of abundance.
When these animals pass away, we would honour their lives by growing a diverse range of fungi that would thrive and nourish the earth, free from any conflict or strife. These creatures that once graced our land would continue to play a vital role in enriching our ecosystem, beyond fossil fertilisers, living on in a truly grand and meaningful way. This vision of a new world celebrates the interconnectedness of all life and our realignment with other animals and living surroundings.
In this way, we would be recycling all the nutrients and energy the animals have collected throughout their lives.
INGREDIENTS:
Toppings:
- Oyster mushrooms
- Shiitake mushrooms
- Wild mushrooms
- Cashew cheese or coconut-based cheese (or any other plant-based cheese)
- Thyme
- Oregano
- Cashew cream (or European soya cream)
- Nutritional yeast
- Wild garlic
Dough:
- Wild flour
- Olive oil
- Pinch of salt
- Water
METHOD:
- Prepare the dough - watch this video for guidance.
- Prepare the toppings by chopping all of the mushrooms and garlic.
- In a pan, braise the garlic with the mushrooms with some salt and olive oil.
- Now it's time to build the pizza. Once the dough has been shaped, add the cashew cream, mushrooms, thyme and oregano. Cook in a fire oven for 4 minutes, rotating the pizza half-way through.
- For the last 2-3 minutes of cooking, add the plant-based cheese and sprinkle some nutritional yeast on top.
- Serve with a sprinkle of chilli oil if desired, and some more fresh thyme and oregano.
NOTE: This pizza can also be made with a red base if preferred, all you have to do is swap the plant-based cream for tomato passata!
