How to make easy banana bread

Put those ripe bananas to good use! 🍌

If your bananas are starting to go brown and look a bit unappetising, instead of just throwing them in the bin, why not give them a new lease of life to share with friends 

Ingredients

  • 2 medium very ripe bananas, peeled and mashed with a fork
  • 140g butter, salted or unsalted, softened
  • 140g caster sugar
  • 140g self-raising flour
  • 2 large eggs, beaten
  • 1tsp baking powder

Optional

  • 50g icing sugar
  • handful dried banana chips
  • chocolate chips (if you want a treat!)

Method

  1. Pre-heat the oven to 180C
  2. Butter a 2lb loaf tin (you can get these pretty cheap from most supermarkets, or online), and line the base and sides with baking paper
  3. Cream/ whisk your softened butter and caster sugar together until light and fluffy. Then slowly add your beaten eggs with a little bit of self-raising flour. 
  4. Fold in the remaining flour, baking powder and bananas. 
  5. Pour the mixture into your loaf tin and bake in the oven for around 50 minutes. You'll want to keep checking on it after 30 minutes - test it with a skewer (it should be able to be inserted and removed cleanly) to see when it's ready. 
  6. Leave it to cool in the tin for 10 minutes and then remove.
  7. If you'd like to decorate the top; mix icing sugar with 2-3 tsp water to drizzle on the top. If you've got some dried banana chips or chocolate chips, sprinkle these along the top.
